A quick recipe for a great cornbread cassarole. Very easy to put together, looks like cornbread from the top, but the corn, onions and peppers give it a bit more texture and flavor.

1 stick butter
1 large onion chopped
¼ cup green peppers chopped
2 eggs slightly beaten
1 (15 ounce) can creamed corn
1 (15 ounce) can whole kernel corn, including liquid
1 ¼ cups Corn Bread Mix
½ tsp salt
1 cup sour cream
4 ounces of grated cheddar cheese

1. Preheat oven to 400°.
2. Sauté peppers and onion in butter.
3. Add eggs, creamed corn, corn and liquid, corn bread mix, salt, sour cream and cheddar cheese.
4. Pour into a 9 X 13 inch baking pan and bake for 40 minutes or until top is golden brown.
